I've been thinking Ice Cream would be great. I'm considering dry ice with some treats for the family. A nice treat on the open water when temps are high would be wonderful.

Starkist chicken or salmon or albacore pouches aren't bad and don't need refrigeration. Or even heating (I've eaten them like a popsicle out of the pouch when desperate). Also Hormel complete meals are pretty good and also don't need refrigeration and can be nuked or boiled. There are green baggies sold at Bed Bath @ Beyond that can keep bananas and other fruit fresh for five days or more in a cooler.

I like to take my NutriSystem meals on board if I am overnighting: there is a highly varied menu, and they require no refrigeration. Using these meals, canned veggies, canned and fresh fruits, I can avoid needing to put anything in the cooler except drinks - and keep to my healthy diet even on the water!
